Portfolio language settings

Hi
I am setting up a new site for classes and workshops using the Ascend theme, and I would like to override the portfolio ‘project’ term (as in ‘next project’ or ‘previous project’) to say ‘workshop’ but I don’t see this listed as an option in the language settings. Is there another way to do this?
