Choosing Multiple Post Categories

Hello,
is it possible to choose multiple post categories to display on the blog? I currently only see the option to choose 1 or All.
I going to be keeping the pinnacle theme, but running restrict content pro to sell fitness programs online. But, for easy management, I was to upload the fitness programs as posts rather than pages because it makes restricting the content much faster since I can do it in batches using categories. The only problem is I dont want my fitness program posts to show up on my blog.
