Choosing a Demo content

I am going to choose Ascend Mountains are Calling demo content. Two questions:
Can I use a video instead of an image for header, like it is in Video Portfolio demo content? I assume I can.
I assume Mountains are Calling demo content considered a shop demo right? Woocommerce isn’t activated yet. If so, when I upload demo content, can I add woocommerce later? Don’t know if client wants it right now.
