Stock status and theme updates

Hi
I have two questions:
1. How do I enter stock status on my products without being visible to customers?
2. I have some updates on my themes that I have not dared to do because it says that any
customizations you have made to the theme files will be lost. Is it ok to not updating or will this do since my slow?
