Multiple, Separate Shopping Pages

Hi, I’m working on a site that has two different manufacturers. One is licensed and doesn’t want his product to appear on the same page as the other. I can see two solutions:
1) If I could eliminate ALL from the viewing possibilities it would force everything to be categorized. Is there a way to delete or hide that option?
2) I could use drop down menus for each brand, but I don’t know how to set this up. Under Settings I only see one input for the shop page. How do I get multiple shop pages that don’t cross over or combine?
