Add a custom currency / symbol in the functions.php file

Hi Ben
Bought the Virtue Premium WordPress Theme recently to build my first website and is very happy with the result I get.
But I am having this troble regarding adding a “custom currency /symbol ” (*Login to see link as I can not locate where the theme functions.php file is, in order to swap out the currency code and symbol with my own.
Would be much appreciated if you can point me the right direction.
