How to change products strings

For example, for the home page Featured Products section, the title is “Featured Products”. how would you change the text to say “Featured Aircraft” or “Featured Pets”, etc.?
Then, I know it’s not your plugin, but for the product detail page, how to set the text from “Product Description” to “Aircraft Description” etc.? If I have to edit a template I can do this but how protect my edits from theme or plugin updates?
