Change "Sale!" tag from product images to something differernt

Hi
I would like to
1) change the “Sale” tab on our pay early to receive a discount products to something different such as “Book early to receive your early bird discount” and
2) Be able to “Book early to avoid disappointment” tab on products in the same place as the “Sale” tab but where they aren’t actually on sale!
