Can’t Assign Product Template

Hi guys,
Since the update to WordPress 5, we are not able to add or update the Product Template in a product. It just keeps defaulting back to it’s previous option.
We have installed the WP Classic plugin, but that didn’t change anything.
Let me know what access you need/want.
