Settings in Theme Options Not Saving

I just started working on a new site using Virtue Premium 2_3_1, what an awesome upgrade from the last version by the way. I am having an issue where I make a change in the theme options, hit save (tried twice) and then a little while while it goes back to the default setting. For example I have entered my email address in the Misc. Settings / Contact Form Email and each time it reverts back to [email protected]. Any idea why? I also notice some major slowness when navigating around the theme options. I have major delays when clicking between sections. Not sure if this my server or the theme, my other sites seem to going fine. Thanks for any help.
