Adding Labels and Removing stuff

Hi there,
I was wondering it it’s possible to add a sticker in the corner of new products added to the site with the label “NEW”.
Also, is there a way to exclude product categories from the Shop? What I mean is: can certain product categories be visible only in the Primary Menu and not when you click on Shop? For example, I want to add a Gifts menu but I want it to be displayed only in the primary menu.
