Can't find items in menu

I have been using the Ascend Premium demon content – Shopping while I learn this and figure out what to do on our site. I am trying to change the menu items, order, and location. It appears there are several Product Categories. I am trying to change them and add them to the menu and put them under the menu item “Category.” However I can’t find the category names in the menu list. Under the Category option are only:
Adventures
Travel Tips
Encouragement
Photography
Uncategorized
These aren’t even in my list of category names. What I have is:
Batting Cages
Pitching Machines
Package Deals
Accessories
Hoodies
Singles
T-shirts
Travel Accessories
Travel Bags
None of the ones even under Products >> Categories are listed. How do I get Product Categories to be listed so I can add them in the menu? /Bob DeCloss
