I am working on this website:

As you can see, right now the header is transparent, with the font and logo set to white.
Once you start scrolling, I would like the header to have a white background, with the font being a dark grey.

However, I cannot seem to pull this off, despite trying a whole lot of different settings, inspired by watching the video on this particular topic.
From what I got from the documentation, you have standard settings for your menu that apply when you start scrolling and settings that apply when it is transparent at the top. Following these principles, I cannot get it to work. Nothing about the menu changes whenever I start scrolling. For example, when I set my standard site logo in the dark grey color (from what I got this should only display on the header when not in transparent mode, so when you start scrolling) it shows up immediately on top, replacing the white once I had set in the setting for the transparent header.

What am I doing wrong?
