Header options in customiser

Hi,
I’m quite a novice at this so please be kind. I created my website years ago and have just kept adding new products etc over the years without really changing any of the layout/style etc.
Recently I have decided to update it and have changed several areas without too much trouble. I wanted a new header so created one using Kadence Header Block. I have no idea how to actually get it to replace the original header though. I have searched many times and it nearly always says to go into appearance – customizer and change it through that. When I go to the appearance – customizer section there is no header option at all. Can anyone tell me why this is and how I might go about sorting this out? I’m using Virtue – Premium theme.
