How to post to just one page category?

When I create a post it goes to all my pages, even when I check a category.
Why can’t I click on a category and that post will only to to that page?
If there is a way to do this, please let me know. I’ve been looking for plugins and unless I’m entering the wrong search string, they don’t exist.
