Mosaic Image Gallery as Homepage

Hey Guys,
So my issue is very similar to a topic I found in the virtue theme forums (*Login to see link but the instructions there seem to either be outdated or only apply to the Virtue theme. I use the Ascend Agency Demo Site and basically what I would like is for the homepage to be a Mosaic style image gallery instead of the Mosaic portfolio gallery that’s provided by the demo content. I went to Theme Options > Home Page Layout to enable Portfolio Full as the linked thread suggests but I didn’t find that option in the Layout Manager.
Any help would be great,
