Where is the default page header background set?

I installed the Pinnacle demo and have been changing the pages to suit my needs.
I have made the changes to my home page and am now trying to set up a new page. I have the content set up using PageBuilder, but it is automatically showing the Pinnacle demo background at the top of the page.
I have seen another post that shows how I can change the background using the Page Title/Subtitle section but I want to be able to change the default image as well.
Please could you tell me where to find this?
